I love me some good soup! In our household we eat soups quite often because they are delicious, healthy, comforting, and easy on digestion. Today I am going to share with you a very easy recipe that I use and how you can change it up as well.
If you are new to my blog, I don't follow any specific diet. I try to consume as many plant-based meals as possible though and I eat an overall balanced diet. Here I share what foods can be beneficial for our mental health, but at the end of the day it's about what works for YOU.
This soup is my comfort food, because it reminds me of my mom and my childhood, and I overall love warm meals with veggies. I hope you enjoy it as much as I do.
1/2-1 red or yellow pepper
1 tbsp olive oil
32 oz vegetable broth (you can also add water for more soup)
whole wheat rotini pasta (or any other pasta)
7 oz garbanzo beans
Spices for the soup:
salt and pepper
(I don't measure my spices and just add it until I love the taste)
Cut carrots, onion, pepper. Cook them in olive oil until golden (you don't need to use oil, if you don't want to). Add garbanzo beans (you can also add it later if you don't want them to be too soft). Add veggie broth with all spices and cover with a lid until it's boiling, then reduce the heat and let it cook for about 15-20 mins. Meanwhile you can add kale. Next, add potatoes (cook for another 15 mins). Add rotini and cook for another 5-10 mins (don't let them cook for too long). Turn off the heat and just let it sit for a while under the lid.
Alright, to modify this soup, you can add cauliflower instead of pasta for gluten free version, it will be as good (add it with potatoes). Garbanzo beans can be replaced with some lentils, if you prefer it better (add when potatoes are almost cooked).
